Main Dish: Garlic Butter Lemon Baked Tilapia
Ingredients:
- 4 tilapia fillets (or other white fish like cod or swai)
- 3 tbsp melted butter
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 tsp lemon zest
- Salt & pepper to taste
- 1 tbsp fresh parsley (or 1 tsp dried)
- Optional: pinch of paprika or Italian seasoning
Instructions:
- Preheat oven to 400°F (200°C).
- Place tilapia fillets in a baking dish.
- In a small bowl, mix melted butter, garlic, lemon juice, zest, salt, pepper, and herbs.
- Pour mixture evenly over fish. Sprinkle with paprika if desired.
- Bake for 12–15 minutes or until fish flakes easily with a fork.
- Garnish with extra lemon wedges and parsley.

Ingredients:
- 2 cups broccoli florets
- 1 zucchini, chopped
- 1 red bell pepper, sliced
- 1 carrot, thinly sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- Salt and pepper
Instructions:
- Toss all vegetables in olive oil, garlic, herbs, salt, and pepper.
- Spread on a baking sheet and roast in the same 400°F oven for 20–25 minutes, turning halfway through.
